Pork Tenderloin With Red Potato Salad And Scallion Dressing

Pork tenderloin served with potato salad featuring scallion dressing.
Ingredients -
Scallion Dressing:
1/3 cup Light Mayonnaise
1 tablespoon Creamy Horseradish Sauce
2 Scallions, chopped
1 teaspoon Sugar
1/2 teaspoon Salt

1-1/2 pounds Red New Potatoes, quartered
1-1/2 pounds Pork Tenderloin
2 teaspoons Montreal Chicken Seasoning
 
Preparation:

Scallion Dressing:
1. In a small bowl, combine light mayonnaise, creamy horseradish sauce, chopped scallions, sugar, and salt.

2. Stir to combine.


Potato Salad:

1. Place potato quarters in saucepan and cover with water.

2. Bring water to a boil. Cook potatoes 15 minutes, or until tender.

3. Remove from heat, drain potatoes in colander. Rinse with cold water and allow to cool.

4. Place potatoes in serving bowl. Toss with scallion dressing.


Pork Tenderloin:

1. Preheat grill over medium heat.

2. Rub tenderloin with chicken seasoning.

3. Grill 20 minutes. Use meat thermometer to insure internal temperature reaches 155 F.

4. Remove tenderloin from grill and cover with foil 5 minutes before slicing.


To Serve:
Slice pork and serve with potato salad.

Always preheat the oven to its intended heat before placing the pork in the oven. The “shock” insures a crisp surface on the outside of your roast.

When inserting a thermometer into a pork roast to check internal temperature, avoid contact with any bones as the bone can cause a false reading.
