Pork Tenderloin With Couscous And Zucchini

Seasoned and grilled pork tenderloin served with zucchini over lentil couscous.
Ingredients -
1 (16 ounces) Pork Tenderloin
4 teaspoons Olive Oil
1/2 teaspoon Kosher Salt
1/2 teaspoon Fresh Ground Black Pepper
2 Zucchini, halved lengthwise, then crosswise
6 ounces box Tomato Lentil Couscous Mix
 
Preparation:

1. Preheat grill to medium heat.

2. Rub tenderloin with 2 teaspoons olive oil. Sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper.

3. Toss zucchini pieces in remaining oil and sprinkle with remaining salt and pepper.

4. Grill pork to desired doneness. Internal temperature should read minimum 155 F., on meat thermometer.

5. Grill zucchini until tender.

6. Remove pork to cutting board. Cover with foil to keep warm.

7. Prepare couscous according to package directions.

8. Cut pork in thin slices. Serve with tomato lentil couscous and grilled zucchini.
