Italian Style Pork Sandwiches

Pork slices seasoned with herb blend, pan fried with onion, bell pepper, tomatoes, and served on crusty Italian bread.
Ingredients -
Seasoning:
3/4 teaspoon Oregano
3/4 teaspoon Rosemary
3/4 teaspoon Kosher Salt
1/4 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Crushed Red Pepper

1 (16 ounces) Pork Tenderloin
2 tablespoons Olive Oil
1 Medium Yellow Onion, sliced
1 Green Bell Pepper, cut in strips
1 Yellow Bell Pepper, cut in strips
4 Plum Tomatoes, cut in chunks
8 slices Crusty Italian Bread
1 clove Garlic, cut in half

 
Preparation:

1. Combine oregano, rosemary, salt, pepper, and crushed red pepper in a small bowl.

2. Carve pork into 12 slices.

3. Sprinkle slices with 2 teaspoons of seasoning mixture.

4. Heat olive oil in skillet over medium heat.

5. Add pork to skillet when oil is hot. Cook, turning occasionally until lightly browned and cooked through.

6. Transfer pork slices to serving platter.

7. Add onion, green and yellow bell pepper, and remaining seasoning mix to skillet.

8. Sauté until vegetables are tender and lightly browned.

9. Add tomatoes and cook additional 3 minutes.

10. Add pork back to skillet pan.

11. When heated through, remove from heat.

12. Rub Italian bread slices with cut sides of garlic, and arrange on plates.

13. Place pork on bread slices and top with vegetable mixture.

Freeze pork immediately after purchase to insure the pork maintains the best quality.

Pork Marinades
When meat has been marinated, the cooking time will be shortened, sometimes significantly. The longer the marinating time, the less time required for cooking.
