Honey Pork Tenderloin

Pork tenderloin featuring crust of brown sugar, honey, vinegar, mustard and paprika.
Ingredients -
1 (1 pound) Whole Pork Tenderloin
4 tablespoons Honey
2 tablespoons Cider Vinegar
2 tablespoons Brown Sugar
1 tablespoons Dijon Mustard
1/2 teaspoon Paprika
 
Preparation:

1. Preheat oven to 375 F.

2. In a small bowl, combine honey, cider vinegar, brown sugar, Dijon mustard, and paprika.

3. Spray foil lined baking sheet with cooking spray.

4. Place tenderloin on baking sheet.

5. Brush tenderloin with honey sauce mixture. Reserve some for basting.

6. Roast 35-40 minutes, basting occasionally. Use meat thermometer to insure internal temperature of thickest part of tenderloin registers 160 F.

7. Remove from oven. Cool slightly. Slice into medallions and serve.

Thawing Pork
Whether you leave pork in its original package when thawing or remove it, place pork on some sort of plate or tray to catch any drippings that may result.
