Cooking Tip
Cutting Pork
If you are cutting thin strips of pork for cooking, freeze the pork for 20-30 minutes before slicing to firm the pork for cutting.

Cooking Tip
Pork Preparation
If you are preparing thick pork chops or steaks and leaving a strip of fat around the edge for flavor, cut through the fat to the meat in a few places so the meat does not curl when grilled or braised.
