Cajun Pork Tenderloin

Pork tenderloin cajun style. Tenderloin is brushed with olive oil and rubbed with cajun rub consisting of paprika, garlic salt, crushed black pepper, dried thyme, chili powder, crushed fennel seed, oregano, and sage. Baked 30 minutes and sliced thin.
Ingredients -
10 ounce Pork Tenderloin, trimmed
1/4 cup Fine Cornmeal
Olive Oil

Cajun Rub:
1 Tablespoons Crushed Black Pepper
2 teaspoons Paprika
2 teaspoons Chili Powder
1 teaspoon Garlic Salt
1 teaspoon Crushed Fennel Seed
1 teaspoon Dried Thyme
1 teaspoon Oregano
1 teaspoon Sage

 
Preparation:

1. Preheat oven to 350 F.

2. In a small bowl, combine crushed black pepper, paprika, chili powder, garlic salt, crushed fennel seed, dried thyme, oregano, and sage.

3. Brush tenderloin with olive oil.

4. Rub tenderloin with spice mix.

5. Roll tenderloin in cornmeal. Coat entire surface.

6. Bake 30 minutes. Remove from oven. Let stand 5-10 minutes before slicing.
