Barbecued Pork With Sweet Potatoes And Apples

Oven barbecued pork tenderloin coated in a barbecue sauce featuring orange marmalade and soy sauce. Roasted apples, green onions, and sweet potatoes seasoned with curry powder complete the dish.
Ingredients -
2 tablespoons Barbecue Sauce
2 tablespoons Orange Marmalade
2 teaspoons Soy Sauce
1 (12 ounces) Pork Tenderloin
2 Red Apples, quartered, cored and cut in 3/4 inch wedges
3/4 teaspoon Curry Powder
1/4 teaspoon Salt
1 pound Sweet Potatoes, peeled, cut in half crosswise, then thinly sliced lengthwise
8 Scallions, ends trimmed
 
Preparation:

1. Preheat oven to 500 F.

2. Line 2 baking sheet with heavy-duty foil. Spray foil with garlic cooking spray.

3. In small bowl, combine barbecue sauce with orange marmalade, and soy sauce.

4. Spread sauce over pork tenderloin and place on 1 side of baking sheet.

5. Place quartered apples on other side of baking sheet.

6. Coat apples with garlic cooking spray.

7. Sprinkle apples quarters with ¼ teaspoon curry powder and 1/8-teaspoon salt.

8. Place scallions on pan with apples.

9. Spread sweet potatoes on second baking sheet.

10. Spray sweet potatoes with garlic spray.

11. Sprinkle remaining curry powder and salt on sweet potatoes.

12. Roast potatoes 10-12 minutes, or until tender.

13. Remove potatoes from baking sheet to serving plate. Cover potatoes with foil to keep warm.

14. Place pork tenderloin in oven, and roast 10 minutes or until meat is done and apples are tender.

15. Remove pork from oven, cool slightly, slice and add to platter with sweet potatoes. Garnish with apple quarters and scallions.

Pork chops for grilling, braising and stuffing should be thicker cuts (1 to 1-1/2 inches thick). Ask your butcher if they aren’t readily available in the meat showcase.
