Apple Pork Tenderloin

Barbecue-flavored pork tenderloin stuffed with mixture of apple slices, golden seedless raisins, breadcrumbs, apple cinnamon yogurt spread, and pecan pieces. Baked quickly in high heat.
Ingredients -
1 cup canned sliced Apples (drained)
10 Reduced-Fat Buttery-Taste Crackers, crumbled
2 tablespoons Apple Cinnamon Yogurt Spread
1/4 cup Golden Seedless Raisins
1/4 cup Pecan pieces
1 1/2 pounds Boneless, Barbecue-Flavored Pork Tenderloin
1/2 teaspoon Seasoned Salt
Cooking Spray
Aluminum Foil (optional)
 
Preparation:

1. Preheat oven to 400° F.

2. Cut slit in pork tenderloin lengthwise through center, like a baked potato. Start near the end cut down and past the center, but not completely through; continue almost to other end (leaving half inch uncut on ends and bottom), so tenderloin can be spread open and filled with apple mixture.

3. In small saucepan, heat apple slices, breadcrumbs, yogurt spread, raisins and pecans. Stirring constantly, bring to a boil. Remove from heat.

4. Season tenderloin with seasoning salt.

5. Line baking sheet with foil.

6. Place apple mixture in pork tenderloin.

7. Place tenderloin on baking sheet with stuffed side pointing up.

8. Bake 30 minutes.

 



Cooking Tip
Apple Cinnamon Yogurt Spread
Substitute apple jelly or applesauce for the apple cinnamon yogurt spread. Add a dash of cinnamon, if desired.

Cooking Tip
Golden Seedless Raisins
Substitute regular seedless raisins if necessary. The raisins add nice flavor and texture, so don't consider omitting from the dish.
